Deep dark ruby in colour, expressive and complex on the nose offering up notes of scrubland, liquorice, and blackcurrant. On the palate, the wine is structured, well-balanced and smooth with nice tannins.
The juices are drawn off and refrigerated at 8°C before direct pressing. Settling and vinification in double- jacketed steel vats to ensure optimum temperature control. Fermented at 16°C to retain all of the fermentation and pre-fermentation aromas. The grapes are from a selection of parcels and picked at optimum ripeness levels. They are de- stemmed and vinified according to traditional methods at elevated temperatures of 28-30° to allow a good extraction of tannins and anthocyanins. Maceration can last for up to 3 weeks.
This wine will go perfectly with soft cheeses and grilled meats.
Aging potential from 3 to 6 years.
